3x600 or 800m up a good hill, all out effort is one way. By the end of the 3rd rep you'll be very close to your max. You'll also be very close to dying. The easier way is just run a 5k race with a max all out sprint at the end. That should get you close. If it's in the summer, even more so.

It’s more that by staying in zone 2 you CAN do 10-20+ hour weeks. As a beginner cyclist though and someone who is building up from very little, an hour several times a week should show decent gains in the initial months of training. Probably. But don't worry about it if you go over for a few minutes.
